Apple removed bit support in Catalina, which is a critical part of the macOS system that almost all of Wine relies on. My steps were more or less something like that. I was able to build Wine 64 bit from source on macOS Catalina and successfully run Notepad++ 64 bit on it.
Official WineHQ packages of the development and stable branches are available for macOS to (Wine won't work on macOS Catalina.
